Traditional panzanella with Variegated Radicchio, pink grapefruit and red cabbage



Ingredients for 4 people:

  • 4 slices of semolina bread,
  • 200g of P.G.I. Radicchio Variegato of Castelfranco,
  • 1 pink grapefruit,
  • 1 apple,
  • 125g of boiled chickpeas,
  • Apple cider vinegar,
  • Extra virgin olive oil,
  • Salt and pepper.


Break up the slices of bread with your hands in a large bowl. Moisten it with water and vinegar. Clean and thinly slice the cabbage after removing the outer leaves and the core. Proceed in the same way with the apple and peel the grapefruit. Stir and leave to flavor. At this point, take the soaked bread and add all the prepared ingredients, the Radicchio Variegato of Castelfranco and the drained chickpeas. Season with oil, salt and pepper and serve.
