Summer spelt salad



Ingredients for 2:

  • 100g of spelt,
  • Rocket salad,
  • 150g of corn,
  • 1 red onion,
  • 50g of feta cheese,
  • 80g of taggiasca olives,
  • P.G.I. Balsamic Vinegar of Modena,
  • Extravirgin olive oil,
  • Salt and pepper


Let’s start by boiling our spelt. In the meantime, cut the onion into thin slices. In a bowl, combine the drained and cooled spelled, rocket salad, corn and onion, then season with an emulsion of oil, balsamic vinegar, salt and pepper. Serve the salad on a serving dish, completing with the crumbled feta cheese and Taggiasca olives.
