Scandinavian salad with potatoes, red onion and corn



Ingredients for 4: 

• 500 g of potatoes
• 1 red onion
• 80 g of canned corn
Fresh Insal’Arte OrtoRomi rocket salad

For the dressing:
Extra virgin olive oil
• 3 tablespoons of white vinegar
• 2 tablespoons of mustard
• 2 tablespoons of mayonnaise
• 2 teaspoons of desalted and chopped capers
Salt and pepper


In a small bowl, emulsify all the ingredients, season with salt and pepper and set aside. Peel the potatoes, wash them, cut them into slices and blanch them for 5-8 minutes or until soft but still hold their shape. Drain and let them cool. Thinly slice the spring onion and transfer it to a bowl with the potatoes, corn and the dressing prepared by emulsifying all the ingredients. Mix and finally add the rocket salad.
