Couscous with vegetables

- 280g of wholemeal couscous
- 200g of Insal’Arte Vivace mix
- 1 shallot
- 3 tablespoons of extravirgin olive oil
Bring to the boil of salted water and pour it little by little on the couscous that you have previously put in a bowl. The right amount of water is the one that exactly covers the volume of the cous cous in the bowl and let the water is completely absorbed. In a pan heat the oil with finely chopped shallots, add the Vivace Insal’Arte salad, salt and cover with a lid so that the vegetables, losing their liquids, cook. After 5 minutes, remove the lid and let the water evaporate. Let’s go back to the cous cous, it’s time to shell it, or take a bit ‘in your hands and rub them together by dropping the grains into the bowl. Repeat this gesture until it is no longer compact. In the meantime the vegetables will have completely dried, so add them to your couscous mixing well so that all the ingredients are well blended. Serve and serve.
