Autumn sandwich

Peel the pumpkin, put it in a bowl and mash it with a fork. Add the beaten eggs, 2-3 tablespoons of grated pecorino cheese, a generous grated nutmeg, the chopped Insal’Arte Rosemary and add salt and pepper to taste. Stir until a homogeneous mixture is obtained.

Put a non-stick pan on the stove, add a little oil and heat well, add a ladleful of mixture and cook over a low heat with the lid 2-3 minutes per side (adjust by checking the browning). Toast the bread in the oven or on the plate.

Stuff the sandwich with an omelette of Insal’Arte Pumpkin, plenty of Insal’Arte Red Radicchio and some flakes of pecorino cheese.
